Instructions:

Prepare the coating:
In a bowl, mix together the breadcrumbs, grated Parmesan, parsley, and salt. Add minced garlic if you like extra flavor. -
Assemble the cordon bleu:
Lay out the pork loin slices. Place one slice on top of another, inserting a slice of cheese between them to form a sort of “sandwich.” -
Brush with oil:
Lightly brush one side of each “sandwich” with extra virgin olive oil. -
Coat with breadcrumbs:
Press the oiled side firmly into the breadcrumb mixture so the coating sticks well. -
Prepare the baking tray:
Line a baking tray with parchment paper and drizzle with a bit of olive oil. -
Arrange and coat the top:
Place the cordon bleu pieces on the tray with the uncoated side facing up. Brush the top with more olive oil and sprinkle generously with breadcrumbs. -
Bake:
Bake in a preheated oven at 200°C (400°F) for about 20 minutes, or until golden and crispy. -
Serve:
Plate and serve hot to enjoy the melted, creamy cheese center and crispy exterior.
Tip:
You can add a slice of ham inside with the cheese for a more traditional cordon bleu flavor.
