Baked Pork Loin Cordon Bleu

Instructions:

  1. Prepare the coating:
    In a bowl, mix together the breadcrumbs, grated Parmesan, parsley, and salt. Add minced garlic if you like extra flavor.

  2. Assemble the cordon bleu:
    Lay out the pork loin slices. Place one slice on top of another, inserting a slice of cheese between them to form a sort of “sandwich.”

  3. Brush with oil:
    Lightly brush one side of each “sandwich” with extra virgin olive oil.

  4. Coat with breadcrumbs:
    Press the oiled side firmly into the breadcrumb mixture so the coating sticks well.

  5. Prepare the baking tray:
    Line a baking tray with parchment paper and drizzle with a bit of olive oil.

  6. Arrange and coat the top:
    Place the cordon bleu pieces on the tray with the uncoated side facing up. Brush the top with more olive oil and sprinkle generously with breadcrumbs.

  7. Bake:
    Bake in a preheated oven at 200°C (400°F) for about 20 minutes, or until golden and crispy.

  8. Serve:
    Plate and serve hot to enjoy the melted, creamy cheese center and crispy exterior.

Tip:


You can add a slice of ham inside with the cheese for a more traditional cordon bleu flavor.
