Preparation:

Prepare the caramelized apples
Peel the apples and slice them thinly.
In a pan, melt the butter with the sugar and lemon juice.
Add the apples and cook for 5–7 minutes until soft and caramelized. -
Prepare the batter
In a bowl, whisk the eggs with the sugar until light and frothy.
Add the melted butter and vanilla extract, mix well.
Sift in the flour and baking powder, then fold gently. -
Assemble the cake
Line the bottom of a 24 cm cake tin with parchment paper.
Arrange the caramelized apples on the bottom.
Pour the batter over the apples. -
Bake
Bake in a preheated static oven at 180°C (356°F) for about 35–40 minutes.
Do the toothpick test to check if it’s done! -
Invert
Let the cake cool for 5 minutes, then flip it onto a serving plate.
