Apple and Yogurt Cake

Instructions:

1. Preheat the oven:

  • Preheat the oven to 180°C (350°F) and lightly grease a cake pan.

2. Prepare the apple:

  • Peel the apple, remove the core, and slice it thinly. Set aside.

3. Make the batter:

  • In a large bowl, beat the eggs, sugar, and a pinch of salt until the mixture is light and fluffy.

  • Add the oil and yogurt to the egg mixture and mix well until smooth.

  • Grate in the lemon zest and stir to distribute the aroma evenly.

4. Add the dry ingredients:

  • Sift in the flour and baking powder, then gently mix until the batter is smooth and fully combined.

5. Assemble the cake:

  • Pour the batter into the prepared pan and level it with a spatula.

  • Arrange the apple slices on top, pressing them slightly so they sink a little into the batter.

  • Sprinkle a few raisins and some sugar sprinkles on top for a bit of crunch.

6. Bake:

  • Bake the cake in the preheated oven for about 35–40 minutes, or until golden and a toothpick inserted into the center comes out clean.

7. Cool:

  • Once baked, remove the cake from the oven and let it cool in the pan for a few minutes before transferring it to a wire rack to cool completely.

8. Garnish:

  • When cooled, dust the cake with powdered sugar for an elegant finish.

9. Serve:

  • Slice and serve this deliciously fragrant cake—perfect for any occasion.
