Instructions:
1. Prepare the Dough:
Sift the flour into a bowl. Make a well in the center, add 2 eggs, and mix with a wooden spoon. In a separate glass, combine warm water with 4 tbsp of vegetable oil and pour into the flour mixture. Add salt. Stir until it comes together, then knead by hand into a soft, elastic dough. Cover the dough with a napkin and let it rest for about 30 minutes.
2. Make the Filling:
Mix the cottage cheese with 2 eggs and salt. Add sour cream, finely chopped green onions and dill. Stir well.
3. Shape the Vertuty:
Divide the rested dough into equal parts (you can get about 5, or more if you want smaller pastries). Shape each piece into a ball. Do not add more flour — instead, oil the work surface lightly.
Roll out each ball into a very thin sheet. Oil your hands with vegetable oil — it helps to roll/stretch the dough thinner. Brush the dough surface with melted butter.
Evenly spread the cottage cheese filling over the dough. Roll the sheet into a log, then twist it into a rope shape. Coil the rope into a spiral (“snail shape”) and place in the center of a greased baking dish.
Repeat with the second dough ball: roll it out, spread the filling, roll into a rope, and spiral it around the first one in the dish. Continue until all dough is used, forming a large spiral pie.
4. Bake:
Mix the egg yolks with 2 tbsp water and brush generously over the top. Bake at 200°C (392°F) for 30–35 minutes, until golden brown.
