👩🍳 Instructions:
1. Prepare the shortcrust pastry:
- 
Work the cold, cubed butter with the sugar until creamy. 
- 
Add the egg and the grated citrus zest. 
- 
Mix in both flours and the baking powder until the dough comes together. 
- 
Wrap the dough in plastic wrap and let it rest in the refrigerator for 30 minutes. 
2. Assemble the tart base:
- 
Divide the dough into two parts. Roll out 2/3 of the dough and use it to line a tart tin (lined with parchment paper). 
- 
Prick the base with a fork. 
- 
Spread the jam evenly over the base. 
- 
Roll out the remaining dough and cover the tart, sealing the edges well. 
3. Prepare the almond paste:
- 
Mix the almond flour with the egg whites until you get a soft mixture. 
- 
Transfer to a piping bag fitted with a star nozzle. 
- 
Decorate the tart surface with piped rosettes or stars. 
4. Bake:
- 
Bake in a preheated oven at 180°C (350°F) for about 45 minutes, or until golden brown. 
5. Glaze:
- 
Let the tart cool completely. 
- 
Mix the 3–4 tablespoons of remaining jam with 1–2 tablespoons of water, bring to a boil, and brush over the surface of the tart for a glossy finish.
