  • 4 red snapper fillets (about 6 oz each), skin-on or skinless

  • 1 tbsp Cajun or Creole seasoning
  • 2 tbsp olive oil

  • 1 small onion, finely chopped
  • 1/2 green bell pepper, finely chopped
  • 1/2 red bell pepper, finely chopped
  • 2 cloves garlic, minced
