Old-Fashioned White Cake: A Taste of Time

Ingredients

For the Cake (Makes 2 9-inch layers)

  • 2 ½ cups (280g) cake flour, sifted
  • 1 tbsp baking powder
  • ½ tsp salt
  • 1 cup (226g) unsalted butter, room temperature
  • 1 ¾ cups (350g) granulated sugar
  • 1 tsp pure vanilla extract
  • ½ tsp almond extract (optional, but lovely)
  • 1 cup (240ml) whole milk, room temperature
  • 6 large egg whites (180g), room temperature

For the Frosting (Simple White Buttercream)

  • 1 cup (226g) unsalted butter, room temperature
  • 4 cups (480g) powdered sugar, sifted
  • 2–3 tbsp milk or cream
  • 1 tsp vanilla extract
  • Pinch of salt

🍽️ Equipment

  • Electric mixer (stand or handheld)
  • Mixing bowls
  • Two 9-inch round cake pans
  • Rubber spatula
  • Sifter
  • Wire cooling rack
