Stuffed Eggplants with Cod and Shrimp

Ingredients:

  • 2 large, evenly sized eggplants

  • 1 medium spring onion

  • 4 garlic cloves

  • 3 pieces of fresh cod

  • 200 g (7 oz) shrimp

  • 1 heaping tablespoon of tomato sauce (homemade if possible — I’ll show you my recipe!)

  • 3 tablespoons extra virgin olive oil

  • A pinch of salt

  • Mixed grated cheese (for topping)
