Thunderstorm Cake with Sour Cream

Ingredients

For the sponge base: Chocolate sponge

  • 2 eggs

  • 100 g sugar

  • 100 g butter, soft

  • 70 g cocoa powder

  • 80 g flour

  • 1 heaping tsp baking powder

For the meringue topping:

  • 50 g butter, soft

  • 50 g sugar

  • 1 packet vanilla sugar

  • 2 egg yolks

  • 75 g flour

  • 1 tsp baking powder

  • 2 egg whites

  • 75 g sugar

  • 50 g sliced almonds

Additionally:

  • 1 jar sour cherries

  • 2 packets red cake glaze (Tortenguss)

  • 400 ml cherry juice (from the sour cherries)

For the cream: Vanilla quark

  • 200 ml milk

  • 2 packets cream powder (Quarkfein), vanilla flavor

  • 500 g low-fat quark

  • 200 g sour cream (Schmand)

  • 2 packets whipped cream stabilizer (Sahnesteif)
