Chicken Thighs in Chimichurri Sauce

Ingredients

For the chicken:

  • 8 chicken thighs (skinless)

  • Salt to taste

  • Fresh parsley for garnish (optional)

For the chimichurri sauce:

  • 3 garlic cloves (finely chopped)

  • 2 tablespoons dried oregano

  • 15 black peppercorns

  • 3 tablespoons dried herbs (thyme, rosemary, marjoram, basil)

  • 50 ml vinegar

  • 100 ml hot water

  • 3 sprigs of fresh parsley (finely chopped)

  • 2 sprigs of fresh cilantro (finely chopped)

  • 1 teaspoon cayenne pepper flakes or powder

  • 150 ml extra virgin olive oil

  • 2 bay leaves (finely chopped)

  • A pinch of sweet or hot paprika (to taste)

  • A pinch of ground cumin

  • 1 tablespoon salt
