APPLE AND OAT PANCAKES

Ingredients (makes 6–8 small pancakes):

  • 1 cup oats (whole or ground)
  • 1 medium apple, grated (with peel if organic)
  • 1 egg (or 1 tablespoon flaxseed + 3 tablespoons water)
  • 1/2 cup milk (can be plant-based)
  • 1 teaspoon cinnamon
  • A pinch of salt

Optional:

  • 1 teaspoon vanilla
  • 1 tablespoon honey or grated piloncillo (unrefined cane sugar)
  • Chopped nuts, raisins, chia seeds, or amaranth
