Sweet Corn Cake

Ingredients:

  • 3 cups sweet corn kernels (400–450 g), fresh or frozen (thawed and well drained)

  • 4 eggs

  • 1 can sweetened condensed milk (397 g)

  • 1 can evaporated milk (360 ml) (or 1½ cups whole milk)

  • 100 g melted butter (or ½ cup neutral oil)

  • ½ cup wheat flour (60 g) (or ½ cup corn flour/masa harina)

  • 2 tsp baking powder (8–10 g)

  • ½ tsp salt

  • 1 tsp vanilla (optional)
