King Cake with Almond Cream (Galette des Rois)

The King Cake with almond cream by Cyril Lignac is made of a crispy, golden puff pastry crust filled with a smooth almond cream made from ground almonds, sugar, eggs, butter, and flavorings such as vanilla and rum. A small ceramic figurine (called a fève) is traditionally hidden inside the cake, and whoever finds it in their slice becomes king or queen for the day. Galette des rois is a much-loved French culinary tradition that has been enjoyed for many years.

Ingredients

Puff pastry:

  • 1 whole egg

  • 2 sheets (or rolls) of puff pastry

  • 1 egg yolk

  • 1 tablespoon water

Almond cream:

  • 100 g ground almonds (almond flour)

  • 12 g cornstarch or custard powder

  • 80 g powdered (icing) sugar

  • 20 g almond milk

  • 80 g butter, at room temperature

  • 60 g beaten egg

Syrup:

  • 100 g water

  • 100 g sugar
