Mushroom and Ham Puff Pastry: Crispy, Creamy, and Irresistible

Ingredients (Serves 4)

For the filling:

  • 2 tbsp olive oil

  • 1 small onion or 1 shallot, finely chopped

  • 500 g mushrooms, trimmed and sliced

  • 150 g smoked ham (or smoked bacon), diced

  • 2 tbsp butter

  • 2 tbsp flour

  • 360 ml hot milk (whole or semi-skimmed)

  • 50 g grated cheese (emmental, comté, gruyère, or parmesan)

  • 2 tbsp fresh parsley, chopped

  • Salt and freshly ground black pepper

  • A pinch of nutmeg (optional)

For the pastry:

  • 1 sheet puff pastry (300–350 g)

  • 1 egg yolk + 1 tsp water (for brushing)
