Coconut Strawberry Thumbprint Cookies

Ingredients:

  • 1 cup (230 g) unsalted butter, softened
  • ⅔ cup (130 g) granulated sugar
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 2 cups (250 g) all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 ½ cups shredded unsweetened coconut (for rolling)
  • ¼ cup strawberry jam (or your favorite jam)
