Classic Peach Cobbler Cheesecake

Ingredients

For the Peach Cobbler Filling:

· 1 can (15 oz) sliced peaches in heavy syrup, drained and chopped (or 1½ cups fresh peaches, peeled and chopped)
· ¼ cup light brown sugar, packed
· 1 teaspoon ground cinnamon
· 1 tablespoon cornstarch (if using fresh peaches, use 2 tbsp)
· 1 tablespoon water (if using fresh peaches)
· 1 teaspoon vanilla extract

For the Cheesecake Swirl:

· 4 oz (½ block) full-fat cream cheese, softened to room temperature
· 3 tablespoons granulated sugar
· 1 large egg yolk
· ½ teaspoon vanilla extract

For the Donut Batter:

· 1 ½ cups all-purpose flour
· 1 teaspoon baking powder
· ¼ teaspoon baking soda
· ½ teaspoon salt
· 2 teaspoons ground cinnamon
· ½ teaspoon ground nutmeg
· ½ cup granulated sugar
· ½ cup buttermilk, at room temperature
· 1 large egg, at room temperature
· ¼ cup unsalted butter, melted (or ¼ cup vegetable oil)
· 1 teaspoon vanilla extract

For the Cinnamon Streusel Topping:

· ¼ cup all-purpose flour
· 2 tablespoons light brown sugar
· 2 tablespoons granulated sugar
· ½ teaspoon ground cinnamon
· 2 tablespoons cold unsalted butter, cubed

For the Optional Glaze:

· ½ cup powdered sugar
· 1-2 tablespoons milk or heavy cream
· ½ teaspoon vanilla extract
