Preparation
1. Beat the eggs
In a large bowl, place the eggs and beat them with an electric or hand mixer for about 1 minute, until they become slightly foamy.
2. Add the sugar
Add the cup of sugar along with the lemon juice. Beat for 2–3 minutes, until the sugar dissolves and the mixture becomes slightly lighter in color.
3. Add the oil
Pour in the oil and continue beating for 2 more minutes, until the mixture is well emulsified.
4. Add milk and vanilla
Add the milk and vanilla extract. Mix for 1 minute until everything is well combined.
5. Add the dry ingredients
Sift the flour together with the baking powder. Add them in 2 or 3 batches, mixing gently just until combined. Do not overmix.
6. Pour into the pans
Pour the batter into 4 rectangular molds (14 cm × 8.5 cm × 6 cm) and 1 additional 12 cm mold, previously greased and floured or lined with parchment paper on the bottom.
7. Bake
Bake in a preheated oven at 180 °C (350 °F) for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
8. Cool
Let the cakes cool in the pan for 10 minutes. Then remove from the molds and let them cool completely on a rack.
Tip
You can add lemon zest, orange zest, raisins, or chocolate chips to give it extra flavor. 🍰
