15-Minute Crumble Cake with Vanilla Pudding

Instructions

  1. Preheat the oven to 175 °C (347 °F) (top and bottom heat). Line a cake tin with parchment paper.

  2. Make the dough
    Mix all the dough ingredients together until combined. Form into a ball and chill in the fridge for 30 minutes.

  3. Prepare the filling
    Cook the pudding according to the instructions on the packet, but use only 500 ml of milk total for both packets. Let it cool slightly, then whisk in the egg.

  4. Make the crumble
    Mix all the crumble ingredients together and knead until you get a crumbly texture.

  5. Assemble the cake
    Press the dough into the bottom of the prepared cake tin, raising the edges about 3 cm up the sides. Spread the pudding filling over the base. Top with the crumble.

  6. Bake in the preheated oven for about 35–40 minutes, until golden.
